FOODS ARE TO BE PROPERLY COOLED IN SHALLOW PANS, UNCOVERED OR WITH ICE WANDS TO RAPIDLY CHILL THROUGH THE TEMPERATURE DANGER ZONE FROM 135 - 70 IN TWO HOURS AND 70 - 41 IN AN ADDITIONAL 4 HOURS. MAKE SURE FOODS ARE UNCOVERED DURING THE COOLING PROCESS. RETRAIN EMPLOYEES ON PROPER TECHNIQUE AND MONITOR.
